Ingredients of Italian Tomato Stew with Kale and Cannelini beans
- It’s 2 can (400 g) of chopped tomatoes.
- Make ready 250 grams of curly kale or savoy cabbage.
- You need 400 grams of can Cannellini beans drained and rinsed.
- You need 8 of shallots, peeled and finely sliced.
- Take 10 of new potatoes (sliced).
- Take 1 stick of celery (chopped).
- Make ready 1 of carrot (chopped).
- Take 4 clove of garlic, crushed.
- It’s 75 ml of red wine.
- Make ready 6 of sun dried tomatoes (chopped).
- It’s 1 pinch of each parsely,coriander,thyme, oregano, paprika,salt and pepper.
- Prepare 5 tbsp of extra virgin olive oil.
Italian Tomato Stew with Kale and Cannelini beans instructions
- Chop the vegetables.
- Saute the shallots in some olive oil.
- Add the celery and carrot and cook for a couple of minutes.
- Add the garlic and cook for a minute..
- Add the wine and cook until it's reduced.
- Add potatoes, sundried tomatoes and tomato puree. Cook for a few minutes.
- Add herbs, then add chopped tomatoes and stock. Bring to a boil then reduce to simmer. Cook for about 10 minutes.
- Add the kale and beans, and cook for a further 5, or intil potatoes are tender.
- Serve with some crusty white bread.
