Mango kesari recipe or mango sheera is made of rava and sweet ripe mango. To use up the surplus mangoes I made this mango halwa.

Ingredients of Mango-Kesari Halwa

  1. Take 1 1/2 Cups of Mango Purée (fresh/frozen).
  2. Take 3-4 tbsps of Ghee.
  3. Make ready 1/8 tsp of Kesar/Saffron.
  4. Take 1 1/2 Cups of Milk & Water- Mixed.
  5. Take 1 tsp of Green Cardamom Powder.
  6. Make ready 1/8 tsp of Salt.
  7. Prepare 3/4 Cup of Sugar (Any-Brown/White).
  8. Prepare 1 Cup of Rava/Semolina.
  9. Make ready 1/2 Cup of Nuts/Dry Fruits (Any that’s readily available).
  10. You need 1 tbsp of Raisins.

Mango-Kesari Halwa step by step

  1. In a pan: Add in the Mango Purée with the Sugar & mix well until all combined & the purée thickens a bit.
  2. In another pan: Add in some ghee & roast the nuts & raisins until they soak the ghee & swell a bit.
  3. Add in the Rava now to the same pan & keep sautéing, until it releases a fine fragrant aroma of the lightly roasted rava & the dry fruits- The flame should be Low-Medium.
  4. Now, in a saucepan: add in the Milk & Water mixture & allow it to boil rapidly.
  5. Now, in a saucepan: Pour in the rava slowly with one hand & with the other, constantly & vigorously keep stirring the mixture to prevent the formation of the lumps.
  6. In case, of any lumps are formed- break it gently & keep stirring with the mixture as it thickens by now- Cook, until all the water in it evaporates.
  7. Finally, add in a tbsp if ghee & mix well- Now, add in the mango-sugar purée & the roasted nuts & mix everything well together & cook for about 7-8 mins time, stirring occasionally to prevent burning.
  8. Turn off the flame & Transfer it to the serving platter & Garnish it with some more nuts & a few strands of Kesar/Saffron & it’s ready to be devoured in no time 💁🏻‍♀️.
